Thanksgiving Ginger & Carrot Soup

Thanksgiving is just around the corner guys!!
Even though I have been living away from my family for almost 8 yrs now, I still cherish this holiday, since it brings me back to those times when my sister and I had to clean the house, and help mom cook the Thanksgiving dinner and have everything set for when the rest of the family arived.

On this holiday I could usually smell Christmas on the air...and the joy of having night of celebrations, board games and amazing comfort food.

I wanted to share a very delicious soup I learned to make a while back.
 I think it could be a great starter for your Thanksgiving dinner, plus it's super easy!!

Another Year...So Many Sweet Dreams

There is something awfully powerful about the word new...
New beginnings, new chapters, new life...

But every day is a new day...
and every time we do something is a new opportunity to do it differently.

Today is the second day of 2014 and like every year, I find myself having lots of enthusiasm, lots of determination to start the year and do all the things I always wish to do and be the person I always wish to be.
But why, I wonder, does this enthusiasm lasts up to mid February?
Every year I sit in front of a blank paper thinking about resolutions, goals and dreams...
this year is no different.
Only that this year, most of my wishes, most of my dreams are linked to another soul... a little one I may say, which holds my heart in his tiny hand.
Life is sweet. Sweet as freshly home made cookies. Sweet as decorating them with the ones you love. Sweet as the kisses I give to Baby Gianni.

Healing Tea Potpourri

I have not been feeling great lately.
The lack of sleep has definitely taken a turn on my
immune system.
This tea potpourri alongside a homemade chicken soup
makes me feel better in no time.

Strawberry Rosemary Mojito

Here I present you to a better version of the Classic Mojito!
All you will need is:
1 Strawberry
A few Rosemary leaves as they are quite strong!!
3 to 4 lime wedges
 1 1/2 oz of Zacapa Rum
 1 1/2 oz of Sweet and Sour 
1oz of Simple Sugar
A muddler




Put all ingredients in a glass


Then muddle all of them.


It will look like this ;)


Add  1 1/2 oz of  Zacapa Rum


Add 1 oz of Sweet & Sour
and  Simple Sugar


Voila!!
You now have a drink that will take you straight to Miami...
Just close your eyes...
I wish I had my friends close to share this Mojito with them.

Italianisimo... Recipe!




Okay, so it has been A WHILE since I post a recipe, I have been too busy EATING which you will see the consecuences on my future posts, but back to the subject, I always forget to take pictures of what I am cooking and always remember about my intent to post AFTER the plate is empty and licked...(ok so I am exaggerating a bit here)
This time was the exception.
Here is one of my recipes to make a delicious italian dish.
We called them Sorrentinos, but in the U.S. I haven't seen this word anywhere, so basically you can call them huge tortellinis.
I bet a few of my italian fellow bloggers will correct me...
I learned to do this when I lived in Argentina for a few years and my mother in law is half Italian, so she used to make EVERYTHING from scratch...especially pastas and pastries...YUM!
It's really easy..but of course it takes time, so make sure there is food in your stomach while doing this to prevent eating the stuffing!!!
  1.  Buy the flour made rounds a.k.a as "plantillas", the ones you would buy to make an oven baked pastry. These are usually on the hispanic or latin aisles at your local supermarket.If your supermarket does not have one of these aisles, then most probably you are not going to even enjoy this dish anyways...jk
  2. Stretch the "plantilla" a little bit so it's not as stiff and you can work with it better
  3. You should have the stuffing for your "sorrentinos" prepared and ready to go.You should try the one I use which is made of Ricotta cheese, mozzarella cheese cut in small pieces, cooking ham in tiny pieces, basil leaves and chopped walnuts.Salt and pepper to taste, and when the mixture is tasty enough to eat it alone, you know is ready.
  4. put a small teaspoon of the mix in the center of the "plantilla"
  5. dab your finger in some water and pass it along the border of the "plantilla" as if it were glue.
  6. fold the "plantilla" and glue both sides together by pressing them with your index finger...I guess that would be the one you use the most to point at people...yeah u know the one I'm talking about! that finger is strong man!
  7. this is the way it should look..like a half moon..or something like it...u get the idea!
  8. hopefully you didn't use your finger too hard cause this is the step where you need that gorgeous "sorrentino" in your hand so you can do the last fold!! You basically take the two ends and make them meet. You can add a dab of water so it will glue better.
  9. and press firmly...making sure they are glued..
  10. isn't that a BEAUTY?? wait until you eat them!!
When you finish doing the quantity of "sorrentinos" that you want, you put them in the freezer until they harden. make sure that none of them are touching each other so they don't stick together. After they harden in the freezer, you can put them all in a bag, (at this point they won't stick to each other anymore) and you can boil them whenever you want to eat something delicious but are too lazy to prepare something.You will know when they are ready to serve when the start floating...around 7 minutes or so..
You can use any sauce to go with it but these are so scrumptious that I eat them with a little bit of butter, drizzle extra virgin olive oil,salt and some parmesan cheese...
simple, classic but it will allow me to savour the yummy filling.

Mint Lemonade Cocktail Recipe (and How-to Video!)

I have been meaning to add a "food and beverage" section to this blog a long time now but hadn't gotten around to it...until now!



Finally took the courage to make a little how-to video as well, which can be kinda weird, the fact of seeing someone and hearing then live after seeing so many lifeless pictures of them..don't u think?


Well, today I wanted to post a recipe of this heavenly cocktail...heavenly because it literally lifts me up and makes me dream with every sip! Don't mock me peeps, once you try it..you will know what I'm talking about!

You will need:

1oz Gin
1 lemon
1 to 2 tbsp of sugar 
3 to 4 mint leaves
Tonic Water
muddler
ice

Cut the lemon in about 7 to 8 wedges.This will make it easier to muddle and extract all of its juice. Put wedges in a glass or container where you can actually muddle it. Put sugar and mint leaves and begin muddling making sure the lemon juice is coming all out. Pour Gin and transfer it to a container where you can shake all the ingredients. If you have a boston shaker like I do use it, if not ANY container that has a lid will do. Shaking the mix will blend everything together, especially the sugar, as well as giving the cocktail a frothy texture...yum!
Transfer everything back to the original glass (or where you are planning to drink the cocktail)top it off with some tonic water.
